One of the topics that I’ve been neglecting to blog about has been FOOD. Since moving in with my fiance 3 months ago, I’ve been doing a fair share of cooking; but unfortunately, I haven’t bothered posting anything. But here’s a simple and DELICIOUS recipe to make after work…it only takes about 20-30 minutes tops to make. Here’s whatcha need:

1lb chicken breasts, sliced thinly, lengthwise
salt and pepper
canola oil
3 x 1 tbsp butter
1/2 cup white cooking wine
1 16 oz can of quartered artichoke hearts

Prep: Season the chicken with salt and pepper, then coat each piece with flour.

1. Using a frying pan, melt the first 1 tbsp butter tab with approx 1 tbsp canola oil until the butter is slightly frothy on top. Place half the chicken pieces into this mixture, and cook until golden brown on each side.

2. Once you’ve cooked the first half of the chicken, place in a medium-sized bowl, and cover with foil to keep warm. Cook the final half of the chicken the same way you cooked the first, and add to the dish with the foil.

3. With a wooden spoon, scrape the bottom of the frying pan (there shouldn’t be too much…only some juices and butter.) Carefully dump the wine into the pan, and set on medium heat until the wine begins to simmer. Once it’s simmering, empty the can on artichokes into the frying pan as well, stirring constantly. 

4. Cook the wine and artichoke mixture until it thickens up (about 5 min.) Remove from heat and add the final 1 tbsp of butter. Stir until the butter is melted, and immediately pour over chicken breasts. Season with a bit more salt and pepper…

…and serve immediately. 🙂
